Quinoa salad | Sweet potato

Ingredients

1/2 cups quinoa, washed and drained

0.5 kg diced sweet potato

8 onions, finely chopped (white and light green
part) =

1/4 cup chopped fresh parsley
·
1/2 cup orange juice
·
1/4 cup apple cider vinegar
·
2 cups pomegranate seeds
·
1/2 cup dried cranberries
·
1/2 teaspoon ground cinnamon
·
1 pinch sea salt
·
1 pinch black pepper
·
4 teaspoons toasted sesame seeds
Instructions
1. PREPARE THE QUINOA
Boil the quinoa in
2 cups of water. Reduce heat to low, cover, and simmer for 20 minutes. Remove
the pot from the heat and let it cool. Stir the quinoa with a fork.
2. COOK POTATOES
Wash the sweet
potatoes and cut them into squares. Then put the sweet potatoes in a steamer
when the water is boiling. Cover the steamer for about 10 minutes until the
sweet potatoes are tender enough to be pricked with a fork. Remove the pot from
the heat and uncover it to cool.
3. PREPARE THE
VEGETABLES
Chop the reed
onions and parsley. Make the orange juice. Mix all the salad ingredients in a
bowl. Add salt and pepper to taste.
4. MAKE THE SALAD
Put the sweet
potatoes and the quinoa in a bowl. Add the red onions, parsley (if you're
using it), pomegranate seeds, blueberries, sesame seeds, and cinnamon. Spread
the orange juice and vinegar over the salad, and mix everything.
5. SERVE
Serve hot or
chilled.
